Layer in shredded turkey and plenty of melty cheese. Roll everything up into cozy, individual portions. - Lasagna Noodles
- Leftover Turkey (shredded)
- Alfredo Sauce
- Grated Mozzarella Cheese
- Green Peas
- Large Eggs
- Ricotta Cheese
- Onion Powder
- Garlic Powder
- Dry Oregano
- Salt

Instructions
Start by preheating your oven to 400F and have a 9"x13" baking dish ready.

- Bring a large pot of water to a boil and cook the lasagna noodle. Keep an eye on them, to make sure they do not break of stick together while cooking. Cook until al dente, bendable, but not fully cooked.

- While the pasta is cooking make the filling. Combine in a bowl, the ricotta, salt, onion powder, garlic powder, dry oregano, eggs, 1 cup of the mozzarella, and the frozen peas. Mix until well combined.

- Carefully remove the blanched lasagna noodles from the water and place lay them down on a clean tea towel.

- Place ⅓ of a cup of the ricotta filling on each noodle, spreading it on about ⅘th of the noodle. Place pieces of the shredded turkey on top of the ricotta filling.

5. Carefully roll up the filled lasagna noodle, towards the end without filling. Be careful to roll it without applying too much pressure, so that the filling does not come out the sides.

6. Place the alfredo rollups in a 9"x13" baking bake, in 2 rows, making sure they are snug so that they stay rolled up while baking.
Pour the alfredo sauce over the turkey rollups and then sprinkle on the remaining ½ cup of grated mozzarella cheese. Place in the preheated 400F oven for 30-35 minutes or until golden brown.

Storage
Cool freshly baked Turkey Alfredo Lasagna Rollups to room temperature before storing. Place individual rollups in an airtight container or wrap them tightly in foil or plastic wrap. Refrigerate for up to 3 days to maintain freshness. Freeze for up to 3 months if storing longer. Reheat in the oven or microwave until hot and bubbly before serving.
