How to make Cottage Cheese Alfredo

- Start by bringing a large pot of salted water to a boil.
- Place your favorite pasta in the water and cook as per the directions on the package.

Place the cottage cheese, milk, grated parmesan, cornstarch, salt and pepper in a blender. Blend until smooth.

Heat a large saucepan on medium heat and cook the minced garlic in a drizzle of olive oil.

Pour the blended cottage cheese mixture in the pan with the garlic. Add seasoning and bring to a simmer while stirring.

Simmer the sauce until it thickens. Add the cooked pasta to the Cottage Cheese Alfredo sauce and toss to cover.
Serve the pasta with freshly grated parmesan and chopped parsley of basil.
Substitutions and Variations
- Milk - Replace the milk in the recipe with any substitute like Almond or Soy.
- Meat - Top your pasta with a roasted chicken breast like my Blackened Chicken to add a protein to the dish. Crumbled bacon is also very good on top of this Cottage Cheese Alfredo.
Equipment you will need
Use a high-powered blender to blend together the ingredients for the sauce. You can also use an immersion blender to blend together the milk, cottage cheese and corn starch.
Storing leftover Cottage Cheese Alfredo
Store any leftover Cottage Cheese Alfredo pasta in an airtight container. Place it in the refrigerator for 2-3 days. When heating up a cream sauced pasta, it is always best to add a sprinkling of water to the dish. This will help to rehydrate the pasta and make it fresher.

Cottage Cheese Alfredo

- 1 High-powered Blender
Ingredients
- 8 ounces Uncooked Pasta
- 1½ cup Cottage Cheese
- 1 cup Milk or milk substitute
- 2 tablespoon Cornstarch
- ¼ teaspoon Freshly Cracked Pepper
- ½ teaspoon Onion Powder
- ½ cup Freshly Grated Parmesan plus more for garnish
- 1 teaspoon Olive Oil
- 3 cloved Garlic minced
- 1 teaspoon Dry Oregano
Instructions
- Bring a large pot of water to a boil and add 1 tablespoon of salt to it. Place your uncooked pasta in the boiling water, cooking it until al dente.
- In the jar of a large blender, add in the milk, cottage cheese, grated parmesan, cornstarch, pepper, and onion powder. Blend for a minute, or until smooth.
- In a large frying pan on medium heat, drizzle in the olive oil. Add the minced garlic to the pan and cook it for a couple minutes.
- Add the blended sauce and the oregano to the frying pan and stir it around with a rubber spatula, until it starts to simmer. Let it simmer while stirring for 3-4 minutes.
- Adjust the seasoning of the sauce with salt as desired. Drain the pasta and add it to the pan with the sauce. Toss the pasta in the sauce to cover.
- Serve with more freshly grated parmesan and any freshly chopped herbs as desired.
- Adding a (sliced) roasted chicken breast or crumbled bacon to this pasta dish is a great way to make it a full meal.
