How to make the galette

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  1. In a medium bowl, stir together the ricotta, Parmesan, basil, lemon zest, salt, and pepper.
  1. Unfold the puff pastry onto the prepared baking sheet and gently roll it into about an 12-inch square if needed.
  1. Spread the ricotta mixture over the pastry, leaving a 1.5 inch border around the edges.
  1. Scatter the corn evenly over the ricotta, followed by the chopped turkey bacon. Arrange the cherry tomatoes cut-side up over the top.

5. Fold the pastry border over the filling, pleating the corners as needed. Whisk together the egg and water and brush the exposed pastry with the egg wash.

6. Bake for 20–25 minutes, or until the pastry is puffed and deep golden brown. Let the galette rest for 5–10 minutes, then garnish with additional basil, Parmesan, freshly
cracked black pepper, and a little extra lemon zest before serving.

How to store the leftover galette

Store leftover Sweet Corn, Tomato & Turkey Bacon Galette in an airtight container in the refrigerator for up to 3 days. Place parchment paper between slices to prevent them from sticking together. Reheat individual portions in a 350°F oven or air fryer until warmed through and crisp around the edges. Avoid reheating the galette in the microwave when possible, as the puff pastry may soften. Freeze cooled slices in a freezer-safe container for up to 2 months, then thaw them overnight in the refrigerator before reheating.
