How to make Turkey Meatball Pizza Muffins

  1. Combine the ground turkey, breadcrumbs, egg, Parmesan, garlic, Italian seasoning, salt, and pepper until just mixed.
  1. Divide the mixture into 12 portions. Wrap each portion around a mozzarella cube, sealing completely, and roll into a meatball.
  1. Bake the meatballs on a parchment-lined baking sheet at 380°F for about 16 minutes, until the turkey reaches an internal temperature of 165°F. Remove from the over and toss with marinara.
  1. Roll out the pizza dough into a 16"x12" rectangle and cut out 12 x 4-inch squares. Press the squares into a greased muffin tin, leaving the corners overhanging.

5. Fill each cup with a sauced meatball and shredded mozzarella. Brin the corners of dough together and pinch close. Bake at 380F for 10-12 minutes or until golden and cooked through.

6. Mix the garlic butter ingredients and brush over the freshly baked and still hot pizza muffins. Let rest for 5 minutes before serving with a side of warm marinara sauce for dipping.

How to store the baked pizza muffins

Store leftover Turkey Meatball Pizza Muffins in an airtight container in the refrigerator for up to 3–4 days. Allow the muffins to cool completely before storing to prevent excess moisture from making the pizza dough soggy. Reheat the muffins in a preheated oven at 350°F (175°C) for 10–15 minutes, or until heated through, to help restore their golden, slightly crisp exterior. Freeze completely cooled pizza muffins in a freezer-safe container or resealable bag for up to 3 months, separating layers with parchment paper to prevent sticking. Thaw overnight in the refrigerator before reheating in the oven until the centres are hot.

Equipment

  • 12-cavity Muffin Tin

Ingredients

For the turkey meatballs

  • 450 grams Ground turkey
  • ⅓ cup Breadcrumbs
  • 1 large Egg
  • ¼ cup Parmesan grated
  • 2 cloves Garlic minced
  • 2 teaspoon Italian herbs
  • 1 teaspoon Salt
  • 75 grams Pizza Mozzarella cut into 12 - ½" cubes

For the pizza muffins

  • 680 grams Pizza Dough
  • 1½ cup Marinara Sauce divided
  • ¾ cup Pizza Mozarella grated

For the garlic butter

  • 2 tablespoon Butter melted
  • ½ teaspoon Garlic powder
  • 1 tablespoon Fresh parsley finely chopped
  • 2 tablespoon Parmesan grated

Instructions

  • Preheat the oven to 380°F (193°C). Line a baking sheet with parchment paper and generously grease a standard 12-cup metal muffin tin, including around the openings.
  • Combine the ground turkey, breadcrumbs, egg, Parmesan, garlic, Italian seasoning, salt, and pepper in a bowl. Mix gently until just combined, then divide into 12 equal portions.
  • Flatten each portion of turkey mixture and place a cube of mozzarella in the centre. Wrap the meat around the cheese and roll gently into a ball, sealing completely so no cheese is exposed. Arrange on the prepared baking sheet.
  • Bake for about 16 minutes, or until the turkey reaches 165°F (74°C). Check the temperature in the meat beside the cheese centre. Let cool slightly, leaving any released liquid on the baking sheet. Increase the oven temperature to 400°F (200°C).
  • Roll out the pizza dough into a 16"x12" rectangle and cut out 12 x 4-inch squares. Press the squares into a greased muffin tin, leaving the corners overhanging.
  • Add one cooked meatball in each dough-lined cup, then top with 2 teaspoon marinara and 2 teaspoon shredded mozzarella.
  • Bring the overhanging dough over the filling and pinch firmly to seal, gently spreading thick folds of dough so the tops bake evenly. Keep each muffin contained within its own cup.
  • Bake for 10-12 minutes, until golden brown and the dough is cooked through around the sides and bottom.
  • Stir together the melted butter, garlic powder, and Italian seasoning. Brush over the muffins and sprinkle with the Parmesan as soon as they come out of the oven.
  • Let rest in the tin for 5 minutes, then carefully remove. Serve warm with extra marinara for dipping.
