Bring a large pot of water to a boil and add 1 tablespoon of salt to it. Place your uncooked pasta in the boiling water, cooking it until al dente.
In the jar of a large blender, add in the milk, cottage cheese, grated parmesan, cornstarch, pepper, and onion powder. Blend for a minute, or until smooth.
In a large frying pan on medium heat, drizzle in the olive oil. Add the minced garlic to the pan and cook it for a couple minutes.
Add the blended sauce and the oregano to the frying pan and stir it around with a rubber spatula, until it starts to simmer. Let it simmer while stirring for 3-4 minutes.
Adjust the seasoning of the sauce with salt as desired. Drain the pasta and add it to the pan with the sauce. Toss the pasta in the sauce to cover.
Serve with more freshly grated parmesan and any freshly chopped herbs as desired.
Adding a (sliced) roasted chicken breast or crumbled bacon to this pasta dish is a great way to make it a full meal.
