Instructions

Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners or grease well. Make 10 larger muffins, or 12 snack-sized muffins.

  1. In a medium bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  1. In a separate larger bowl, whisk eggs, applesauce, sugars, oil, and vanilla until smooth.
  1. Add wet ingredients to dry and fold gently until just combined. Fold in the diced apples making sure not to overmix.
  1. Divide batter evenly among muffin cups (about ¾ - full). Bake 18–22 minutes, until a toothpick inserted comes out clean. Cool in the pan for 5 minutes, then transfer to a wire rack.

Storing the Applesauce Muffins

Store the baked Applesauce Muffins by allowing them to cool completely before transferring them to an airtight container. Keep the muffins at room temperature for up to 2 days, or refrigerate them for up to 5 days to maintain freshness. Freeze the muffins for longer storage by placing them in a freezer-safe bag or container for up to 3 months. Thaw at room temperature or warm gently in the microwave or oven before serving.
