Substitutions and Variations
Sweet Potatoes
- Substitute with regular russet potatoes, Yukon Gold potatoes, or roasted butternut squash halves.
- Vary by using Japanese sweet potatoes for a firmer texture and nuttier flavour.
Olive Oil
- Substitute with avocado oil, canola oil, or melted butter.

Lean Ground Beef
- Substitute with ground turkey, ground chicken, ground pork, or plant-based ground alternatives.

Baked Sweet Potato Halves
Preheat the oven to 400F and line a baking tray with parchment paper. Brush off any dirt from the sweet potatoes and rinse under water then pat them dry.

- Carefully cut the sweet potatoes in half. Drizzle olive oil on them, and place them cut side down on the prepared baking tray.

- Bake the sweet potato halved in the preheated 400F oven for 25-30 minutes, or until caramelized and fork tender.
Coleslaw and Ground Beef Mixtures

- Make the coleslaw dressing by combining in a medium-sized mixing bowl, the Greek yogurt, sriracha sauce, apple cider vinegar, and salt. Whisk until smooth.

- Add the cabbage coleslaw to the bowl of dressing. Toss until well covered and keep refrigerated until ready to use.

5. Cook the ground beef in a frying pan with the garlic, ground chipotle chili pepper, cumin, smoked paprika, and oregano. Once fully cooked you are ready to serve.

6. Assemble the sweet potatoes by placing them on a serving platter cut side up. Use a fork to fluff up the sweet potato. Scoop some of the cooked ground beef on each sweet potato halve. Garnish with some of the coleslaw and sprinkle with feta cheese.
How to store Ground Beef Sweet Potato
Store any leftover Ground Beef Sweet Potato by allowing all components to cool completely before handling. Separate the elements into individual airtight containers to maintain the best texture and flavour. Refrigerate for up to 3–4 days, reheating the sweet potatoes and ground beef gently in the oven or microwave until warmed through, and add the coleslaw fresh just before serving to preserve its crunch.

- 1 tablespoon Olive Oil
Ground Beef Filling
- 16 oz Lean Ground Beef
- 1 tablespoon Olive Oil
- 2 cloves Garlic minced
- 1 teaspoon Smoked Paprika
- 1 teaspoon Cumin
- ½ teaspoon Ground Chipotle Chili Pepper
- 1 teaspoon Dried Oregano
- ½ teaspoon Salt
Buffalo Coleslaw Mixture
- ¼ cup Greek Yogurt
- 2 teaspoon Sriracha Hot Sauce
- 2 teaspoon Apple Cider Vinegar
- ½ teaspoon Salt
- 1½ cup Coleslaw Mixture
- ¼ cup Crumbled Feta Cheese
