- Whole Wheat Flour
- Baking Soda
- Salt
- Ground Cinnamon
- Cottage Cheese
- Very Ripe Bananas
- Eggs

Instructions
Start by preheated your oven to 350F and have a loaf pan ready to go.

- Whisk together in a medium bowl, the flours, baking soda, salt, and cinnamon.

- Place the bananas and the cottage cheese in a large bowl. Use a stick blender to puree them until smooth.

- Whisk in the eggs and then add the brown sugar and melted butter to the wet ingredients and whisk until the sugar is dissolved.

- Fold the dry ingredients into the wet ingredients. Mix until just combined, still lumpy, not overmixed.

5. Coat a loaf pan with non-stick spray. Pour the batter into the prepared mold and level the batter.

6. Bake the Cottage Cheese Banana Bread in the preheated oven for 50-55 minutes. Insert a toothpick in the centre, and it should come out clean.
Let the Cottage Cheese Banana Bread cool completely and then gently remove it from the pan.

Substitutions
- Flour - Replace the whole wheat flour in the recipe with all purpose flour.

- ½ cup Whole Wheat Flour
- 1 teaspoon Baking Soda

- 3 large Very Ripe Bananas thawed if frozen
- ¾ cup Cottage Cheese
- 2 large Eggs
- ¾ cup Brown Sugar
- 1½ teaspoon Vanilla Extract
- ⅓ cup Butter melted

- Fold the dry ingredients into the wet ingredients. Mix until just combined, still lumpy, not overmixed.
