Preheat your oven to 350F and have a loaf pan ready to go.
Whisk together in a medium bowl, the flours, baking soda, salt, and cinnamon.
In a second, larger bowl, combine the bananas and the cottage cheese. Use a stick blender to puree them until smooth. Use a blender for this step if you do not have a stick blender.
Whisk in the eggs and then add the brown sugar and melted butter to the wet ingredients and whisk until the sugar is dissolved.
Fold the dry ingredients into the wet ingredients. Mix until just combined, still lumpy, not overmixed.
Coat the loaf pan with non-stick spray. Pour the batter into the prepared mold and level the batter.
Bake the loaf in the preheated oven for 50-55 minutes. Insert a toothpick in the centre, and it should come out clean.
Let the Banana Bread cool completely and then gently remove it from the pan.
