I love making chicken salad like my Canned Chicken Salad (Waldorf) My Greek Quinoa Salad is similar to this one, as it is more filling than a regular salad. Although you can always add a grilled chicken on top of a leafy green salad like my Buffalo Chicken Salad.

Ingredients

Gone are the days of plain mayonnaise-based chicken salads. Add in some Greek yogurt, some citrus and fresh ingredients, to make it something very special.

How to make Chicken Wild Rice Salad

Start by cooking your wild rice. The ratio for wild rice is 3 parts water to 1 part rice. Once cooked, cool the rice down to room temperature.

Make the dressing by combining all of its ingredients in a large bowl.

Whisk all of the dressing ingredients until smooth.

Chop up the green onions, celery, bell pepper, and chicken. Place in the bowl with the dressing.

Continue by adding the cooled wild rice, the toasted pecans, and the craisins to the bowl.

Stir until everything is covered in the dressing. Adjust the salt and pepper to your liking and serve.

Serve this Chicken Wild Rice Salad on top of a bed of greens, inside of a pita, or scoop it up with crostini.

Substitutions

  • Canned Chicken - Replace the Roast Chicken with 2 large cans of canned chicken.
  • Turkey - If you have leftover turkey, use 2 cups of cubed (or shredded) meat.
  • Sour Cream - Replace the Greek Yogurt in the recipe with sour cream.
  • Nuts - The toasted pecans can be replaced by other nuts, or seeds like sunflower.

Keep any leftovers refrigerated in an airtight container for 2-3 days.

Dressing Ingredients

  • ¼ cup Greek Yogurt
  • ¼ cup Mayonnaise
  • 2 teaspoon Dijon Mustard
  • 1 teaspoon Granulated Sugar
  • 2 tablespoon Orange Juice from half an orange
  • ½ tablespoon Orange Zest from half an orange
  • 1 teaspoon Salt

Filling Ingredients

  • 2 large Chicken Breasts diced small
  • 1 cup Cooked Wild Rice cooled
  • 2 stalks Green Onion thinly sliced
  • 2 ribs Celery thinly sliced
  • ½ large Red Bell Pepper diced small
  • ? cup Pecans toasted
  • ? cup Craisins

Instructions
 

  • Start by combining all of the dressing ingredients in a large bowl. Whisk until the dressing is smooth.
  • Add all of the filling ingredients to the bowl with the dressing. Fold everything together.
  • Serve on top of a bed of leafy greens, inside of a wrap.
