Substitutions and Variations

  • Swap the dried cranberries for dried cherries, raisins, or chopped dried apricots for a different sweet-tart flavor profile.
  • Replace the feta cheese with goat cheese, blue cheese, or shaved Parmesan to change the character of the salad.
  • Use different nuts or seeds such as toasted pecans, walnuts, sliced almonds, pumpkin seeds, or sunflower seeds for added crunch.
  • Substitute the Brussels sprouts with finely shredded cabbage, kale, or a combination of both for a similar hearty texture.
  • Add extra protein by mixing in grilled chicken, turkey, shrimp, chickpeas, or white beans to turn the salad into a complete meal.
  • Include fresh fruit such as diced apples, pears, pomegranate seeds, or grapes for additional sweetness and color.
  • Change the dressing by using maple syrup instead of honey or swapping apple cider vinegar for white wine vinegar or lemon juice.
  • Make it dairy-free by omitting the feta cheese or replacing it with your favorite plant-based alternative.
  • Add more vegetables such as shredded carrots, thinly sliced radishes, diced cucumber, or bell peppers for extra crunch and color.
  • Boost the flavor with fresh herbs like parsley, dill, mint, or chives to complement the earthy Brussels sprouts.

How to make a Shaved Brussels Sprout Salad

  1. Prepare the Brussels sprout: Trim the ends from the Brussels sprouts and remove any damaged outer leaves. Thinly shave the Brussels sprouts using a sharp knife, mandoline, or food processor fitted with a slicing attachment. Transfer them to a large mixing bowl.
  1. Add the remaining salad ingredients: Add the apple, dried cranberries, toasted almonds, feta, onion, and parsley to the bowl with the shaved Brussels sprouts.
  1. Prepare the dressing: Whisk together the olive oil, lemon juice, Dijon mustard, honey, garlic, salt, and black pepper in a small bowl until smooth and well combined.
  1. Dress and toss the salad: Pour the dressing over the salad and toss until everything is evenly coated. Let the salad sit for 10 minutes before serving to slightly soften the Brussels sprouts and allow the flavors to develop.

Storage

Store the prepared Shaved Brussels Sprout Salad in an airtight container in the refrigerator for up to 3 days. Unlike leafy green salads, shaved Brussels sprouts hold up well after being dressed, making this an excellent make-ahead recipe for meal prep and entertaining. Give the salad a quick toss before serving to redistribute the dressing and ingredients. Add any crunchy toppings, such as nuts or seeds, just before serving if you want to maintain their texture.
