How to make a Caesar Salad with Grilled Asparagus

- Grill the asparagus: Preheat the grill to medium-high heat. Toss the asparagus with olive oil, salt, and pepper. Grill for 4–6 minutes, turning occasionally, until lightly charred and tender-crisp. Transfer to a cutting board. Cut the asparagus stems into bite-sized pieces and reserve the tips for garnish.

- Prepare the Caesar dressing:Whisk together the mayonnaise, lemon juice, Dijon mustard, garlic, parmesan, Worcestershire sauce, and water in a large salad bowl until smooth. Season with salt and pepper to taste.

- Assemble the salad: Add the chopped romaine lettuce and the grilled asparagus stem pieces to the bowl. Toss until evenly coated with the dressing.

- Garnish and Serve: Transfer the salad to a serving platter or bowl. Top with the reserved asparagus tips, shaved parmesan, and croutons. Serve immediately.
Storage

Grilled Asparagus Caesar Salad
Ingredients
Grilled Asparagus
- 450 grams Asparagus
- `1 tablespoon Olive Oil
- ½ teaspoon Salt
- ⅛ teaspoon Black Pepper
Greek Yogurt Caesar Salad Dressing
- ½ cup Plain Greek Yogurt
- 2 tablespoon Mayonnaise
- 2 tablespoon Lemon Juice
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire Sauce
- ¼ cup Parmesan Cheese finely grated
- 1 clove Garlic finely minced
Salad Ingredients
- 1 large Romaine Heart cleaned and chopped
- ½ cup Parmesan Cheese shaved
- 1 cup Croutons
Instructions
Grill the Asparagus
- Preheat the grill to medium-high heat. Cut the lighter colored woodier ends of the asparagus and discard. Toss the asparagus with olive oil, salt, and pepper.
- Grill for 4–6 minutes, turning occasionally, until lightly charred and tender-crisp. Transfer to a cutting board. Cut the asparagus stems into bite-sized pieces and reserve the tips for garnish.
Make the Caesar Salad Dressing
- Whisk together the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, garlic, parmesan, Worcestershire sauce, in a large salad bowl until smooth. Season with salt and pepper to taste.
Assemble the Grilled Asparagus Caesar Salad
- Remove half of the dressing from the large bowl, into a smaller container and set aside.
- When ready to serve, add the chopped romaine lettuce and the grilled asparagus stem pieces to the large bowl. Toss until evenly coated with the dressing.
- Transfer the salad to a serving platter or bowl. Top with the reserved asparagus tips, shaved parmesan, and croutons. Serve immediately.
