Ingredients
  

Salad Ingredients

  • 450 grams Brussels Sprouts 6 cups shaved
  • 1 piece Apple thinly sliced
  • ¼ cup Red Onion finely chopped
  • cup Sliced Almonds toasted
  • cup Dried Cranberries
  • cup Feta Cheese crumbled
  • 3 tablespoon Fresh Parsley finely chopped

Honey Dijon Dressing

  • ¼ cup Extra Virgin Olive Oil
  • 2 tablespoon Lemon Juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Liquid Honey
  • 1 clove Garlic minced small
  • ½ teaspoon Salt
  • teaspoon Black Pepper

Instructions
 

  • Trim the ends from the Brussels sprouts and remove any damaged outer leaves. Thinly shave the Brussels sprouts using a sharp knife, mandoline, or food processor fitted with a slicing attachment. Transfer them to a large mixing bowl.

  • Add the apple, dried cranberries, toasted almonds, feta, onion, and parsley to the bowl with the shaved Brussels sprouts.
    Add the salad ingredients to a large bowl
  • Whisk together the olive oil, lemon juice, Dijon mustard, honey, garlic, salt, and black pepper in a small bowl until smooth and well combined.
    Whisk the dressing ingredients in a bowl.
  • Pour the dressing over the salad and toss until everything is evenly coated. Let the salad sit for 10 minutes before serving to slightly soften the Brussels sprouts and allow the flavors to develop.
    Add the dressing to the salad and toss.

Notes

Store the prepared Shaved Brussels Sprout Salad in an airtight container in the refrigerator for up to 3 days. Unlike leafy green salads, shaved Brussels sprouts hold up well after being dressed, making this an excellent make-ahead recipe for meal prep and entertaining. Give the salad a quick toss before serving to redistribute the dressing and ingredients. Add any crunchy toppings, such as nuts or seeds, just before serving if you want to maintain their texture.
