- All Purpose Flour
- Cocoa Powder
- Baking Soda
- Salt
- Granulated Sugar
- Milk
- Butter
- Large Egg
- Vanilla Bean Paste
- Espresso Powder (optional)
- Cottage Cheese
- Semi Sweet Chocolate Chips
- Heavy Whipping Cream
- Candy Coated Chocolate Chips (Mini M&M)

Make the Cottage Cheese Brownies
Start by preheating your oven to 350F.

- Grease an 8"x8" baking pan lightly with butter of non-stick spray. Line the baking tray with parchment paper, making sure it runs up the side of the pan as well.

- Combine the Flour, Cocoa Powder, Baking Soda, Salt, and optional Espresso Powder, in bowl and whisk them to combine. Set aside.

- Place the cottage cheese and milk in a large bowl. Use an immersion blender to puree the cottage cheese with the milk until smooth.

- Pour the melted butter into the cottage cheese mixture, while whisking at the same time. Whisk in the sugar, vanilla, and egg as well.

5. Whisk continuously and pour in the melted chocolate. Keep whisking vigorously until the chocolate is well incorporated.

6. Add the dry ingredients to the wet ingredients. Use a whisk to start mixing the batter.

7. Use a rubber spatula to fold and mix the batter until well combined.

8. Transfer the batter to the prepared baking tray and use the spatula to smooth it out, making sure that you get it in the corners.

9. Bake the Cottage Cheese Cosmic Brownies in the preheated 350F oven for 20 minutes or until a toothpick inserted comes out clean.
Let the brownie cool down to room temperature before icing it.
Make the Cosmic Brownies Icing

- Pour the hot cream over the chocolate chips in a small bow. Let it rest for 1 minutes and start stirring in the center of the bowl until the ganache starts to form (core) and keep stirring until completely smooth.

2. Remove the brownies from the pan, keeping the paper under it. Pour the chocolate ganache over the cooled brownie. Use a spatula or the back of a spoon to evenly spread the ganache over the brownies.

3. Sprinkle on the candy coated chocolate chips over the fresh chocolate ganache.

- Slide a cutting board or large plate under the freshly decorated brownies. Refrigerate for 15-20 minutes to allow the glaze to set before cutting.
5. Use a large chefs knife to cut the Cottage Cheese Cosmic Brownies into your desired sized pieces. Run the knife under hot water to warm it up. Use paper towel to dry off the hot knife and proceed to make a cut into the brownies. Wipe down the knife and repeat the process with the hot water and paper towel to get clean easy cuts.

Substitutions
- Dairy - Use regular milk for this recipe instead of the Almond Milk. Feel free to also change out the almond milk with other substitutes like soy, cashew or oatmeal milk.
- Butter - Replace the Plant butter from the recipe with normal Unsalted Butter or margarine. If using salted butter, remove the ½ teaspoon of salt from the dry ingredients.
Storage
Store Cottage Cheese Cosmic Brownies properly to maintain their fudgy texture. Place them in an airtight container at room temperature for up to 3 days to keep them soft. Refrigerate for up to a week, and bring them to room temperature before serving for the best taste. Wrap individual brownies tightly in plastic wrap and freeze in a sealed container for up to 3 months. Thaw at room temperature or microwave for a few seconds to enjoy a warm, gooey treat anytime!

- ¾ cup All Purpose Flour
- ½ cup Dutch Process Cocoa Powder
- ½ teaspoon Baking Soda

- 1 cup Cottage Cheese
- ½ cup Almond Milk
- ¼ cup Unsalted Plant Butter
- 1 large Egg
- ⅓ cup Granulated Sugar

- ½ cup Semi Sweet Chocolate Chips
Chocolate Glaze
- ⅓ cup Heavy Whipping Cream
- ½ cup Semi Sweet Chocolate Chips
- ¼ cup Mini Candy Coated Chocolate Chips Mini M&M
Instructions
