Preheat your oven to 350F.
Grease an 8"x8" baking pan lightly with butter of non-stick spray. Line the baking tray with parchment paper, making sure it runs up the side of the pan as well.
Combine the Flour, Cocoa Powder, Baking Soda, Salt, and optional Espresso Powder, in bowl and whisk them to combine. Set aside.
Place the cottage cheese and milk in a large bowl. Use an immersion blender or a blender, to puree the cottage cheese with the milk until smooth.
Pour the melted butter into the cottage cheese mixture, while whisking at the same time. Whisk in the sugar, vanilla, and egg as well.
Melt the ½ cup of chocolate chips in the microwave, stirring it every 30 seconds, until just melted. Whisk the wet ingredients continuously and pour in the melted chocolate. Keep whisking vigorously until the chocolate is well incorporated.
Add the dry ingredients to the wet ingredients. Use a whisk to start mixing the batter. Use a rubber spatula to fold and mix the batter until well combined.
Transfer the batter to the prepared baking tray and use the spatula to smooth it out, making sure that you get it in the corners.
Bake the Cottage Cheese Cosmic Brownies in the preheated 350F oven for 20 minutes or until a toothpick inserted comes out clean. Let the brownie cool down to room temperature before icing it.
