    Ground Beef Sweet Potato

    Create a comforting yet bold meal with this Ground Beef Sweet Potato recipe, where simple ingredients come together in the most satisfying way. Roast sweet potato halves until tender and caramelized, then open them up and pile on a savoury, seasoned ground beef mixture for hearty flavour. Finish each potato with a crunchy buffalo coleslaw that adds heat, or my Apple Cranberry Coleslaw for freshness, and contrast, turning an everyday dinner into something crave-worthy and complete.

    Substitutions and Variations

    Sweet Potatoes

    • Substitute with regular russet potatoes, Yukon Gold potatoes, or roasted butternut squash halves.
    • Vary by using Japanese sweet potatoes for a firmer texture and nuttier flavour.

    Olive Oil

    • Substitute with avocado oil, canola oil, or melted butter.
    • Vary by using garlic-infused olive oil for added depth.

    Lean Ground Beef

    • Substitute with ground turkey, ground chicken, ground pork, or plant-based ground alternatives.
    • Vary by using a blend of beef and pork for richer flavour.

    Cumin

    • Substitute with ground coriander or taco seasoning.
    • Vary by using toasted whole cumin seeds for more aroma.

    Oregano

    • Substitute with Italian seasoning or thyme.
    • Vary by using fresh oregano (triple the amount).

    Ground Chipotle Chili Pepper

    • Substitute with chili powder, cayenne pepper, or crushed red pepper flakes.
    • Vary by using adobo sauce for a smoky, saucy finish.

    Coleslaw Mix

    • Substitute with 1 cup of shredded cabbage and ½ cup grated carrots.
    • Vary by adding shredded carrots, red cabbage, or apple for sweetness and crunch.

    Greek Yogurt

    • Substitute with sour cream, skyr, or dairy-free yogurt.
    • Vary by mixing in lime juice or honey for balance.

    Sriracha Sauce

    • Substitute with buffalo sauce, hot sauce, gochujang, or chili garlic sauce.
    • Vary by adjusting heat level or adding smoked hot sauce.

    Apple Cider Vinegar

    • Substitute with white wine vinegar, red wine vinegar, or fresh lemon juice.
    • Vary by using rice vinegar for a milder acidity.

    Crumbled Feta Cheese

    • Substitute with blue cheese, goat cheese, cotija, or shredded cheddar.
    • Vary by using dairy-free feta or omitting entirely for a lighter finish.

    Baked Sweet Potato Halves

    Preheat the oven to 400F and line a baking tray with parchment paper. Brush off any dirt from the sweet potatoes and rinse under water then pat them dry.

    1. Carefully cut the sweet potatoes in half. Drizzle olive oil on them, and place them cut side down on the prepared baking tray.

    1. Bake the sweet potato halved in the preheated 400F oven for 25-30 minutes, or until caramelized and fork tender.

    Coleslaw and Ground Beef Mixtures

    1. Make the coleslaw dressing by combining in a medium-sized mixing bowl, the Greek yogurt, sriracha sauce, apple cider vinegar, and salt. Whisk until smooth.

    1. Add the cabbage coleslaw to the bowl of dressing. Toss until well covered and keep refrigerated until ready to use.

    5. Cook the ground beef in a frying pan with the garlic, ground chipotle chili pepper, cumin, smoked paprika, and oregano. Once fully cooked you are ready to serve.

    6. Assemble the sweet potatoes by placing them on a serving platter cut side up. Use a fork to fluff up the sweet potato. Scoop some of the cooked ground beef on each sweet potato halve. Garnish with some of the coleslaw and sprinkle with feta cheese.

    How to store Ground Beef Sweet Potato

    Store any leftover Ground Beef Sweet Potato by allowing all components to cool completely before handling. Separate the elements into individual airtight containers to maintain the best texture and flavour. Refrigerate for up to 3–4 days, reheating the sweet potatoes and ground beef gently in the oven or microwave until warmed through, and add the coleslaw fresh just before serving to preserve its crunch.

    Ingredients
      

    Roasted Sweet Potatoes

    • 2 medium Sweet Potatoes halved lengthwise
    • 1 tablespoon Olive Oil

    Ground Beef Filling

    • 16 oz Lean Ground Beef
    • 1 tablespoon Olive Oil
    • 2 cloves Garlic minced
    • 1 teaspoon Smoked Paprika
    • 1 teaspoon Cumin
    • ½ teaspoon Ground Chipotle Chili Pepper
    • 1 teaspoon Dried Oregano
    • ½ teaspoon Salt

    Buffalo Coleslaw Mixture

    • ¼ cup Greek Yogurt
    • 2 teaspoon Sriracha Hot Sauce
    • 2 teaspoon Apple Cider Vinegar
    • ½ teaspoon Salt
    • 1½ cup Coleslaw Mixture
    • ¼ cup Crumbled Feta Cheese

    Instructions
