How to make Turkey Cranberry Phyllo Bites

- Heat the oil in a skillet over medium heat. Add the shallot, garlic and cook 3–4 minutes, until soft. Add the ground turkey and cook until browned, breaking it into small pieces. Mix in the cranberries, orange juice, Dijon, Worcestershire, thyme, and salt. Cook 3–4 more minutes, allowing the cranberries to soften and burst slightly.

- Remove from heat and stir in the softened cream cheese until fully melted then add in the mozzarella. Taste and adjust seasoning. Let cool slightly before assembling. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

- Lay one sheet of phyllo on a clean surface and lightly brush with melted butter. Top with a second sheet, brush again lightly with butter.

- Cut the layered phyllo lengthwise in 6 equal strips. Scoop 2 tablespoon of filling at one end of each strip.

5. Take the bottom right corner and fold the dough over the filling to make a triangle. Fold the bottom left corner up to make another triangle. Continue folding until all the dough is folded.

6. Place on the baking sheet and brush the tops lightly with butter. Bake for 15–18 minutes, until golden, crisp, and flaky. Cool for 5 minutes before serving.
Storage
Store the baked Turkey Cranberry Phyllo Bites by cooling them completely so the steam doesn’t soften the layers. Transfer them to an airtight container and keep them in the refrigerator for up to 3 days. Reheat them in a 350°F (175°C) oven for 8–10 minutes to bring back their crisp, flaky texture before serving. Freeze them in a single layer if storing longer, then reheat from frozen until hot and flaky.

- 1 large Shallot finely chopped
- 3 cloves Garlic minced
- 450 grams Ground Turkey 1 pound
- 1 cup Fresh Cranberries roughly chopped
- 2 tablespoon Worcestershire Sauce
- 2 tablespoon Dijon Mustard
- ¼ cup Orange Juice
- ½ teaspoon Dry Thyme
- 1 teaspoon Salt
- 4 ounces Cream Cheese softened
- ½ cup Grated Mozzarella
- 450 grams Phyllo Pastry
- ½ cup Unsalted Butter melted
