Apple Cinnamon Waffles

Ingredients

Find below the list of ingredients I used to make these Apple Cinnamon Waffles.

  • Baking Powder
  • Ground Cinnamon
  • Salt
  • Almond Milk (or regular milk)
  • Greek Yogurt
  • Eggs
  • Vanilla
  • Brown Sugar
  • Fresh Apples

Instructions

A large bowl containing eggs, milk, yogurt, and sugar.

Whisk together the milk, yogurt, eggs, vanilla, and brown sugar in a large bowl.

Combine the flour, baking soda, cinnamon, and salt in a separate bowl.

Dice the apple very finely and set aside.

Add the dry ingredients to the wet.

Mix the dry and wet ingredients together with a whisk. Make sure that the batter is still a little lumpy, without over mixing.

Add the chopped apples to the batter. Fold them until just incorporated, again without overmixing.

Heat up your waffle iron. Coat the inside with non-stick spray and use your waffle iron's suggested batter amount for the iron. In my waffle iron (seen below), I use 1 cup of batter.

Substitutions

  • Dairy - Use any type of dairy in this recipe instead of the almond milk.
  • Fruit - Try using different types of fresh fruit like peaches, bananas, or even berries instead of the apples in this recipe.
  • Sugar - Replace the brown sugar in this recipe with granulated sugar or even honey.

Storage

Place any leftover Apple Cinnamon Waffles in a resealable freezer bag and keep in the freezer. Reheat them by place them in the toaster and they will have a similar texture to when you first made them!

Wet Ingredients

  • cup Almond Milk
  • ½ cup Greek Yogurt
  • 2 large Eggs
  • 2 tablespoon Canola Oil
  • 2 teaspoon Vanilla Extract
  • 2 tablespoon Brown Sugar

Dry Ingredients

  • 2 cups All Purpose Flour
  • tablespoon Baking Powder
  • 2 teaspoon Ground Cinnamon
  • ¼ teaspoon Salt
  • 2 cups Apples cored and finely chopped

Instructions
 

  • In a large bowl, combine the milk, yogurt, eggs, oil, vanilla, and brown sugar. Whisk the wet ingredients until smooth.
  • In a separate smaller bowl, mix together the flour, baking powder, salt, and cinnamon. Prepare the apples by coring chopping in fine pieces, to get 2 cups of apples.
  • Preheat the waffle iron so that it is ready by the time you finish making the batter.
  • Place the dry ingredients in the wet ingredients. Use a whisk to gently combine the two together. The batter should stay lumpy, and not overmixed. Add the apples pieces and use a rubber spatula or large spoon to fold them in the batter, again, without overmixing the dough.
  • Once the waffle iron is at temperature, spray the inside with non-stick spray. Follow your waffle iron's consideration for the amount of batter it suggests. When making them in a single 8-inch waffle, it takes 1 ¼ cup of batter.
  • Once the waffle is lightly golden, remove it from the iron and repeat the previous step until the batter has been used up. Serve right away.

    We brought these to a family brunch. Normally, my potluck items are not very popular, but, THESE delicious waffles were the first to go. Good thing I doubled the recipe!
