Buffalo Turkey Calzone

Make a Quick Pizza Dough

Start making the Buffalo Turkey Calzone recipe by preheating your oven to 450F and making the pizza dough. Use premade pizza dough by using 550 grams of dough.

  1. Mix together in a small mixing bowl, the warm water (90F-100F), sugar, and rapid rise yeast. Set aside to proof.

  1. Add to the bowl of a stand mixer, the flour, salt, olive oil, garlic powder, dry oregano, and proofed yeast.

  1. Attach the dough hook attachment to the mixer. Mix the dough on medium speed for 3-4 minutes until it comes into a smooth ball.

  1. Take the dough out of the mixer and divide in 2 balls. Rub a little olive oil over the balls of dough, place on a plate, and cover with plastic wrap.

Make the Buffalo Turkey Filling

  1. Make the calzone filling by adding the shredded turkey to a large bowl. Add to it, the corn, and red onion.

  1. Add to the bowl of turkey, the alfredo sauce, buffalo sauce, and shredded mozzarella. Mix all ingredients until well combined.

Assemble the Calzones

  1. Roll out a ball of dough into a 10-inch circle. Take half of the buffalo turkey filling and place it on one half of the rolled out dough, leaving a 2 inch border.

  1. Fold the other half of the dough, over the turkey filling, making sure to leave a 1-inch bottom flap of dough.

  1. Take the 1-inch bottom flap, and bring it over the edge of the top flap. Press down the with your finger to seal the calzone shut.

  1. Repeat the last 3 steps to make the second calzone. Transfer the calzones to a lightly greased pizza pan or baking sheet. Brush a little olive oil over the calzones.

Bake the Buffalo Turkey Calzones into the preheated 450F oven for 15 minutes, or until a golden crust has been achieved. Remove from the oven and let them rest for 5-10 minutes before serving.

Substitutions and Variations

  • Shredded Turkey - Replace the turkey with shredded chicken from a cooked rotisserie chicken.
  • Turkey Alfredo - Substitute the ½ cup of buffalo sauce with with ½ cup alfredo sauce. Include chopped greed onions and bacon bits to the meat mixture.
  • Pizza Dough - Use 550 grams of premade fresh pizza dough.

Storage

Cool freshly baked Buffalo Turkey Calzones completely at room temperature. Wrap each calzone tightly in foil or plastic wrap to keep them fresh. Place the wrapped calzones in an airtight container or zip-top bag. Refrigerate for up to 3 days or freeze for up to 3 months. Label and date each calzone before freezing for easy tracking.
Reheat in the oven or air fryer to restore their crispy texture and gooey filling.
