  • Unsalted Butter (remove the salt from the recipe if using salted butter)

  • Cottage Cheese (preferably 2%)

Instructions

Start by preheating your oven to 425F. Line a baking tray with parchment paper.

  1. Combine in a large bowl, the white flour, baking powder, salt, and optional herbs. Whisk until well combined.

  1. Whisk in a smaller bowl, the egg, milk, cottage cheese, and the melted butter.

  1. Pour the wet ingredients into the dry ingredients.

  1. Stir until the dough comes together but still shaggy. Transfer to a clean surface or counter. Knead the dough with your hand until smooth and all dry ingredients have been absorbed.

5. Dust a very little amount of flour onto the counter if the dough becomes a little sticky. Roll the dough out into a 9 inch circle, it should be about ¾ inches in thickness. Use a drinking glass or cookie cutter of between 2 ¾ and 3 inches in diameter. Cut out 4 biscuits. Press the dough trimmings together, making sure that it is the same thickness as the first time you rolled it out. Cut out 2 more biscuits.

6. Transfer the biscuits to the prepared baking tray. Place into the preheated 425F oven and bake for 13 minutes or until lightly golden. Remove from the oven and let them cool for 5-10 minutes before serving.

Substitutions and Variations

Experiment with these changes to create a variety of cottage cheese biscuits for any occasion! Mix in shredded cheese, fresh herbs like chives or dill, or diced jalapeños to add texture and flavor. Sweeten the dough by incorporating a tablespoon of honey or maple syrup for a different twist. Serve the biscuits with jam to complement the sweetness.

  • Flour - Replace the Whole Wheat flour in the recipe with White Flour, as long as the total amount of flour is the same.
  • Dairy - Although you can't really replace the cottage cheese in this recipe, you can replace the butter with a plant-based version, and the milk with dairy alternatives.
  • Herbs - Add freshly chopped herbs like parsley, dill, or chives, instead of the dry herbs in the recipe. Replace the dry oregano with dry parsley or a herb blend. If using a herb blend with salt, remove the ½ teaspoon of salt found in the ingredients.

Storage

To keep your Cottage Cheese Biscuits fresh and delicious, allow them to cool completely at room temperature before storing. Place them in an airtight container or resealable plastic bag to preserve their moisture. For short-term storage, keep them at room temperature for up to 2 days. For longer storage, transfer them to the refrigerator, where they’ll stay fresh for about a week.

If you’d like to save them for even later, freeze the biscuits in a single layer on a baking sheet until solid, then transfer them to a freezer-safe bag or container for up to 3 months. When ready to enjoy, reheat in the oven at 350°F (175°C) for a few minutes to restore their warmth and softness.
