Start by preheating the oven to 420F and lining a baking tray with parchment paper.
Cut the sausage rings into straight pieces. Place the pieces in between two wooden chop sticks. Make ¼ inch cuts into the sausage, cutting down to the chopsticks.
Place the chopsticks aside and cut the scored sausage into ¾ inch pieces. Place all of the pieces into a large bowl and set aside.
Make the Maple BBQ sauce by combining the maple syrup, ketchup, mustard, brown sugar, vinegar, salt, and garlic powder into a small saucepan.
Whisk the sauce over medium heat until it start to bubble. Bring the heat down to low and simmer for 2 minutes until slightly thickened.
Set ¼ cup of the Maple BBQ sauce aside and pour the rest of the sauce in a large bowl with all of the Hasselback Kielbasa Bites. Toss the pieces of sausage in the sauce until well covered.
Use a pair of tongues to place the Maple BBQ Hasselback Kielbasa Bites on the prepared baking tray, shaking off any extra sauce before removing from the bowl.
Bake for 18 minutes turning over the sausages over half way through so that they do not burn on one side.
Create the dipping sauce by whisking together the reserved ¼ cup of Maple BBQ sauce and any extra sauce from the sausages, with the mayonnaise.
Server the Maple BBQ Hasselback Kielbasa Bites on a plate with the dipping sauce. Sprinkle with chopped fresh parsley as a garnish option.
