Drizzle the olive oil on the pizza pan. Use a solid pizza pan, or a perforated one, either will work. If using a pizza stone, feel free to use that methos as well.
Stretch out the pizza dough into a disk and place it on the pan. Create a 12-14 inch circles by using your fingers to push out the dough to the sides, creating a crust on the edge.
Spread the hummus evenly over the dough, leaving a 1-inch border.
Sprinkle the ¾ cup of the grated mozzarella over the hummus. Place the roasted red peppers, mushrooms, olives, tomatoes and onions over the cheese.
Top the vegetables with the remaining ¼ cup of mozzarella. Sprinkle the dry oregano on top.
Place in the preheated 450F oven and bake for 20-25 minutes, or until the crust is golden brown.
Remove the baked pizza from the oven and let it rest for 5 minutes. Garnish with the microgreens and serve.
