How to make Turkey Bacon Creamed Corn
Preheat the oven to 375F and prepare a 9-inch oven-safe casserole dish, set aside.

- Cut the slices of turkey bacon into ¼ inch pieces and set them aside.

- Dice up the onion and bell pepper. Mince the garlic and set aside.

- Drizzle olive oil in a large frying pan on medium heat. Add the sliced turkey bacon and cook until crispy. Remove from the pan onto a clean plate.

- Add the same pan, the diced onion, bell pepper, garlic, and corn. Cook while stirring until the corn has a nice char to it and the onions are translucent.

5. Remove the pan from the heat. Add to the pan, the smoked paprika, chives, cream of chicken, and ¾ cup of the grated cheese. Return the crispy bacon to the mixture, keeping some to sprinkle on top. Stir until well combined and season to taste.

6. Transfer the mixture to the prepared 9-inch casserole. Top with the remaining ¼ cup of grated cheese and the reserved crispy bacon. Bake uncovered at 375F for 20 minutes or until golden and bubbly. Remove from the oven, let it rest for 5 minutes and enjoy.
Storage
Store the Turkey Bacon Creamed Corn casserole by allowing it to cool completely before covering or transferring it to an airtight container. Refrigerate the baked casserole for up to 3 days to maintain the best texture and flavor. Reheat individual portions in the microwave or warm the entire dish in a 350°F (175°C) oven until heated through, covering loosely to prevent drying. Freeze leftovers in a freezer-safe container for up to 2 months, then thaw overnight in the refrigerator before reheating.
