Preheat the oven to 375F and prepare a 9-inch oven-safe casserole dish, set aside.
Drizzle olive oil in a large frying pan on medium heat. Add the sliced turkey bacon and cook until crispy. Remove from the pan onto a clean plate.

Add the same pan, the diced onion, bell pepper, garlic, and corn. Cook while stirring until the corn has a nice char to it and the onions are translucent.
½ medium Yellow Onion, 2 cloves Garlic, ½ large Bell Pepper, 3 cups Corn Kernels
Remove the pan from the heat. Add to the pan, the smoked paprika, chives, cream of chicken, and ¾ cup of the grated cheese. Return the crispy bacon to the mixture, keeping some to sprinkle on top. Stir until well combined and season to taste.
½ teaspoon Smoked Paprika, 2 tablespoon Fresh Chives, 1 can Cream of Chicken Concentrate, 1 cup Grated Cheddar Cheese
Transfer the mixture to the prepared 9-inch casserole. Top with the remaining ¼ cup of grated cheese and the reserved crispy bacon. Bake uncovered at 375F for 20 minutes or until golden and bubbly. Remove from the oven, let it rest for 5 minutes and enjoy.
