How to make Ground Turkey Burritos

- Place a large non-stick frying pan on medium heat. Drizzle in a little olive oil, and add the chopped onion and minced garlic. Add the ground turkey and cook fully.

- Season the cooked turkey with the cumin, paprika, and chili powder. Add the black beans, cooked rice, salsa, and frozen corn. Stir to combine, cook until heated through, and remove from the heat.

- Assemble the burritos by placing the 4 large tortillas on a clean surface. Place grated cheese in the middles, followed by the turkey mixture. Garnish with sour cream, cilantro, and 2 slices of avocado.

- Wrap the burrito up tightly and serve as is, or place in a hot, lightly greased frying pan. Start by grilling the folded sides first in order to give it a good seal. Grill both sides until golden and enjoy!
Storage
For the fridge (2–3 days):
- Let the burritos cool to room temperature (this prevents sogginess from trapped steam).
- Wrap each burrito tightly in foil or plastic wrap.
- Place them in an airtight container or zip-top bag.
- Reheat in a skillet, oven, or microwave until warmed through.
For the freezer (up to 3 months):
- Wrap each burrito tightly in foil (or parchment + foil for extra protection).
- Place them in a freezer-safe bag or container to prevent freezer burn.
- Reheat straight from frozen in the oven (350°F / 175°C for 30–40 minutes) or unwrap and microwave in 1–2 minute bursts until hot.
Tip: If you know you’ll be freezing, skip toppings like sour cream, fresh salsa, or lettuce inside the burrito — they don’t freeze well. Add those fresh after reheating.
