    Variations

    • Nutty Crunch: Add chopped pecans, walnuts, or almonds to the crumble topping.
    • Spiced Up: Mix nutmeg, cardamom, or ginger into the batter for extra warmth.

    • Cream Cheese Swirl: Add spoonfuls of sweetened cream cheese to the batter for richness.

    How to make Apple Coffee Cake batter

    Preheat the oven to 350F. Spray the inside of a 9" springform pan and line the bottom with parchment paper. Set aside.

    1. Make the cinnamon crumble by combining in a bowl, the flour, cinnamon, brown sugar. Stir to combine and then cut in the cold butter until a fine crumble is obtained.

    1. Mix together in a separate bowl, the flour, baking powder, baking soda, and salt. Stir to combine and set aside.

    1. Use a hand blender or a whisk to mix in a large bowl, the melted butter and granulated sugar. Mix in the eggs, followed by the milk and yogurt.

    1. Add the chopped apples to the wet ingredients and then fold in the dry ingredients with a rubber spatula. Mix the batter until just combined, without overmixing.

    How to bake Apple Coffee Cake

    1. Place ½ of the cake batter into the bottom of the prepared pan. Spread to level it using a rubber spatula. Evenly sprinkle half of the cinnamon crumble over the batter.
    1. Place the rest of batter over the crumble, by the spoonful, being careful not to disturb the crumble. Carefully spread the batter. Sprinkle the remainder of the cinnamon crumble on top.
    1. Bake the Apple Coffee Cake in the preheated 350F oven for 45-50 minutes, or until a toothpick inserted in the middle comes out clean. Remove the outer ring of the pan and let the cake cool.
    1. Whisk together the lemon juice and icing sugar until smooth. Drizzle over the cooled cake and serve.

    Storage

    Wrap the Apple Coffee Cake tightly in plastic wrap or place it in an airtight container. Keep it at room temperature for up to 3 days to maintain softness and moisture. Refrigerate it for up to 5 days if you want to extend freshness. Freeze it for up to 2 months by placing the wrapped cake in a freezer-safe bag. Thaw overnight in the refrigerator and warm gently in the oven before serving.

    Cinnamon Crumble Mixture

    • ⅔ cup Brown Sugar
    • ¾ cup All Purpose Flour
    • 1 tablespoon Cinnamon
    • ⅓ cup Cold Butter

    Dry Cake Batter Ingredients

    • 1½ cup All Purpose Flour
    • 1 teaspoon Baking Powder
    • ½ teaspoon Baking Soda
    • ¼ teaspoon Salt

    Wet Cake Batter Ingredients

    • ¾ cup Butter melted
    • ½ cup Granulated Sugar
    • 3 large Eggs
    • 2 teaspoon Vanilla
    • ½ cup Greek Yogurt
    • ⅓ cup Milk
    • 2 cups Apples chopped finely

    Icing Drizzle

    • 1 cup Icing Sugar
    • 2 teaspoon Lemon Juice or just enough for consistency

    Instructions
     

    • Preheat the oven to 350F. Spray the inside of a 9" springform pan and line the bottom with parchment paper. Set aside.

    Cinnamon Crumble

    • Make the cinnamon crumble by combining in a bowl, the flour, cinnamon, brown sugar. Stir to combine and then cut in the cold butter until a fine crumble is obtained.

    Dry Ingredients

    Assemble the cake and Bake
