Instructions
Preheat the oven to 350F. Spray the inside of a 9" springform pan and line the bottom with parchment paper. Set aside.
Cinnamon Crumble
Make the cinnamon crumble by combining in a bowl, the flour, cinnamon, brown sugar. Stir to combine and then cut in the cold butter until a fine crumble is obtained.
⅔ cup Brown Sugar, ¾ cup All Purpose Flour, 1 tablespoon Cinnamon, ⅓ cup Cold Butter
Dry Ingredients
Mix together in a separate bowl, the flour, baking powder, baking soda, and salt. Stir to combine and set aside.

Wet Ingredients and Cake Batter
Use a hand blender or a whisk to mix in a large bowl, the melted butter and granulated sugar. Mix in the eggs, followed by the vanilla, milk and yogurt.

Add the chopped apples to the wet ingredients and then fold in the dry ingredients with a rubber spatula. Mix the batter until just combined, without overmixing.

Assemble the cake and Bake
Place ½ of the cake batter into the bottom of the prepared pan. Spread to level it using a rubber spatula. Evenly sprinkle half of the cinnamon crumble over the batter.
Place the rest of batter over the crumble, by the spoonful, being careful not to disturb the crumble. Carefully spread the batter. Sprinkle the remainder of the cinnamon crumble on top.
Bake the Apple Coffee Cake in the preheated 350F oven for 45-50 minutes, or until a toothpick inserted in the middle comes out clean. Remove the outer ring of the pan and let the cake cool.
Whisk together the lemon juice and icing sugar until smooth. Drizzle over the cooled cake and serve.
