How to make ABC Muffins
Preheat the oven to 400F and prepare a muffin pan with parchments liners.

- Whisk together in a medium bowl, the flour, baking powder, salt, and cinnamon. Set aside.

- Whisk together in a separate larger bowl, the bananas and brown sugar. Mix until smooth and sugar is fully dissolved.

- Add the eggs to the wet ingredients and whisk until smooth. Continue by whisking in the vanilla and oil.

- Grate the carrot and add them to the wet ingredients, followed by the finely diced apple. Stir to combine.

5. Add the dry ingredients to the wet, using a rubber spatula to gently fold everything together. Stir until just combine, without overmixing.

6. Divide the batter into the prepared muffin pan. Turn the oven temperature down to 370F. Bake for 18-20 minutes or until a toothpick inserted in the middle of a muffin comes out clean.
Storing the ABC Muffins
Store your freshly baked ABC Muffins in an airtight container at room temperature for up to three days, using paper towels to absorb excess moisture. Refrigerate them in a sealed container for up to one week, and warm slightly before serving to refresh their texture. Freeze the muffins by wrapping each one individually in plastic wrap or foil, then placing them in a freezer-safe bag or container for up to three months. Thaw at room temperature or reheat gently whenever you’re ready to enjoy them again.

- 1 cup Carrots peeled and grated
- 1 cup Apples diced finely
- 2 large Very Ripe Bananas
Dry Ingredients
- 2 cups All Purpose Flour
- 2 teaspoon Baking Powder

- 1 tablespoon Ground Cinnamon
