Preheat the oven to 400F and prepare a muffin pan with parchment liners. Whisk together in a medium bowl, the flour, baking powder, salt, and cinnamon. Set aside.
2 cups All Purpose Flour , 2 teaspoon Baking Powder, ½ teaspoon Salt, 1 tablespoon Ground Cinnamon
Whisk together in a separate larger bowl, the bananas and brown sugar. Mix until smooth and sugar is fully dissolved.
2 large Very Ripe Bananas , ½ cup Brown Sugar
Add the eggs to the wet ingredients and whisk until smooth. Continue by whisking in the vanilla and oil.
2 large Eggs, 2 teaspoon Vanilla Extract, ⅓ cup Avocado Oil
Grate the carrot and add them to the wet ingredients, followed by the finely diced apple. Stir to combine.
1 cup Apples, 1 cup Carrots
Add the dry ingredients to the wet, using a rubber spatula to gently fold everything together. Stir until just combine, without overmixing.
Divide the batter into the prepared muffin pan. Turn the oven temperature down to 370F. Bake for 18-20 minutes or until a toothpick inserted in the middle of a muffin comes out clean.
