Use thick cuts of bread when making French Toast to better absorb the custard. Try to buy an unsliced brioche loaf, french bread, or sourdough for best results. If you can not find unsliced bread, then a Texas Toast Sandwich Bread would work best.
1 loaf White Sourdough Bread
Slice the bread in 1 to 1 ½ inch slices. Keep the ends so you can make delicious pan fried croutons with olive oil and herbs.
Make the custard by combining in a bowl, the eggs, milk, sugar, cinnamon, salt, and instant espresso. Whisk until smooth.
6 large Eggs, ½ cup Milk , 1 tablespoon Granulated Sugar , ½ tablespoon Instant Espresso Powder, ½ teaspoon Ground Cinnamon, ¼ teaspoon Salt
Preheat a large griddle at 350F or a non-stick frying pan on medium heat. Use butter or non-stick spray on the surface before placing on the French Toast.

Place each slice of bread in the custard for 20-30 seconds. Use a fork to press the bread into the custard if using a day-old bread to help it soak up most mixture. Let excess custard drip off the soaked bread.
Place the French toast onto the preheated and greased griddle or pan. Cook for 3-4 minutes, or until golden brown. Turn the French toast over and for another 3 minutes or golden. Remove from the griddle and repeat with the rest of the soaked slices.
Serve the prepared Coffee Cream over the hot French toast and garnish with the chocolate shavings. Top with more of your favorite toppings like maple syrup, icing sugar, or fresh cut strawberries.
