Preheat the oven to 400F with a rack in the middle position.
Clean and dry the brussels sprouts. If there is any browning at the root, cut off very little, just enough to remove it. Keep the root intact, in order to prevent the sprout to fall apart when cutting them in half.
When cutting the brussels sprouts in half, make sure the cut goes through the middle of the root, so that the layers stay together.
In a large bowl, prepare the dressing by whisking together; the honey, chili flakes, minced garlic, and olive oil. Make sure the the mixture comes together (emulsifies).
Add the prepared brussels sprouts to the dressing and gently toss so that they are all well coated.
Pour out the mixture onto a baking sheet and spread out the brussels sprouts evenly.
Place the baking sheet into the preheated oven for 20-25 minutes, flipping around the brussels sprouts half way through.
When nice and caramelized, remove them from the oven and sprinkle with the sea salt flakes or a pinch of salt, to taste. Transfer to a serving bowl or platter. Serve hot and enjoy!
