Ingredients

  • 1 lb Ground Beef
  • 2 tablespoon Taco Seasoning
  • 4 cups Green Leaf Lettuce chopped
  • 1 cup Cottage Cheese
  • 1 medium Tomato cubed
  • ¼ cup Red Onion thinly sliced
  • ¼ cup Fresh Cilantro roughly chopped
  • 1 large Avocado
  • ½ cup Grated Cheese
  • 1 piece Fresh Lime

Instructions

  • Add the ground beef to a preheated skillet or frying pan on medium-high heat. Cook until fully browned and stir in the taco seasoning. Take off the heat when fully cooked.
1 lb Ground Beef, 2 tablespoon Taco Seasoning
  • Chop up the cleaned head of lettuce. Thinly slice the red onion and cube the tomato. Have the avocado ready to go, but only prepare it when ready to serve, to prevent browning.
4 cups Green Leaf Lettuce, 1 medium Tomato, ¼ cup Red Onion, 1 large Avocado
  • Split the chopped green leaf in the bottom of two serving bowls or plates. Divide the cooked ground beef evenly between the two plates.
  • Spoon the cottage cheese on top of the ground beef and chopped lettuce. Garnish the taco bowl with fresh cilantro, prepared tomato, red onion, grated cheese, and slices of avocado.
1 cup Cottage Cheese, ¼ cup Fresh Cilantro, ½ cup Grated Cheese
  • Serve with a fresh squeeze of lime juice to help create a type of dressing for the Cottage Cheese Taco Bowl when stirring it in with the cottage cheese.
    1 piece Fresh Lime
