Instructions

- Step 1: Combine all spices into a large bowl and combine thoroughly with mixture

- Blanch the asparagus:
Bring a pot of salted water to a boil and add the asparagus. Cook for 2–3 minutes, just until tender-crisp and bright green. Drain well and set aside.

- Make the cream sauce:
Melt the butter in a large skillet over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly, without browning.

- Add the milk:
Gradually whisk in the warm milk until smooth. Cook for 3–5 minutes, stirring often, until the sauce thickens to a creamy consistency. Add half of the grated parmesan to the sauce, and season with salt, pepper, and nutmeg, if using.

5. Combine:
Add the asparagus to the skillet and gently stir to coat in the sauce. Cook for 2–3 minutes, until the asparagus is heated through.

6. Finish: Stir in lemon juice and remaining half of parmesan. Taste and adjust seasoning as needed. Transfer to a serving platter and sprinkle on the fresh dill, if using.
Storing the Creamed Asparagus
Store the Creamed Asparagus by allowing it to cool completely before transferring it to an airtight container. Refrigerate for up to 2 days to maintain the best texture and flavor. Reheat gently on the stovetop or in the microwave over low heat, stirring occasionally and adding a splash of cream or milk if needed to loosen the sauce. Avoid freezing, as the creamy sauce and asparagus can become watery when thawed.
