Bite into a flaky and cheesy appetizer with my Alfredo Asparagus Bundles. Wrap up fresh asparagus and parmesan, with store-bought puff pastry, to make an impressive, yet very easy side dish. Top with grated mozzarella and "Everything Seasoning" (affiliate link), then bake to perfection! Ingredients

- Fresh Asparagus
- Olive Oil
- Roll of Puff Pastry (thawed out)
- Boursin Cheese
- Grated Parmesan
- Grated Mozzarella
- Egg
- Everything Topping or Sesame Seeds

Instructions
Preheat the oven to 425F and line a baking sheet with parchment paper.

Trim the woody ends off the asparagus.

Drizzle olive oil over the asparagus and sprinkle with salt. Toss to coat evenly.

Cut the 10"x10" puff pastry into 4 squares. If you are using a 9"x14" puff pastry, you can cut it into 6.

Divide the wheel of Boursin cheese into four, or six depending on your pastry. Spread in a flat diagonal log.

Place the asparagus in the same direction as the cheese. If using tinner asparagus, it will amount to about 5 of them per bundle. Use 3 if they are thicker.

Sprinkle grated (or flaked) parmesan cheese in the center, over the asparagus.

Hold onto the corners to the left and right of the asparagus and gently pull to lightly stretch them out. Brush them with egg wash. Bring one side over the asparagus, holding the bundle together.

Brush the top of the 1 folded corner. Take the second corner of pastry and bring it all the way over the bundle, tucking it under.

- Brush egg wash on each bundle with a silicone brush (affiliate link).
- Sprinkle each bundle with "Everything Seasoning" or Sesame Seeds.
- Sprinkle with Mozzarella cheese and place in the preheated oven.

Substitutions and Variations
- Cream Cheese: Replace the Boursin Cheese with a flavored cream cheese spread.
- Sesame Seeds: Replace the Everything Topping with a sprinkle of Sesame Seeds.
- Prosciutto: Wrap up the asparagus with a slice of Prosciutto when placing them in the bundle for an extra layer of flavor.
Storage
Store any leftover Alfredo Asparagus Bundles in an airtight container (affiliate link). Store in the freezer to preserve the crispiness of the pastry. Reheat in a toaster oven (or regular oven at 300F for best result. Use the microwave to reheat but be aware that the dough will soften as a result.

Recipe

Alfredo Asparagus Bundles
Ingredients
- 20 pieces Fresh Asparagus
- 1 tablespoon Olive Oil
- ½ teaspoon Salt
- 1 sheet Puff Pastry 10"x10" (thawed out)
- 150 grams Garlic and Herb Boursin or any other flavor
- 1 cup Grated Parmesan Cheese
- 1 large Egg for the egg wash
- 1 tablespoon Milk
- ½ cup Grated Mozzarella Cheese
- 2 teaspoon Everything Topping or Sesame Seeds
Instructions
- Preheat your convection oven to 425F and line a baking sheet with parchment paper.
- Cut off the purple, woodier ends of the asparagus. They should end up being about 6-7 inches in length. See notes below.
- Place the trimmed asparagus on a plate and drizzle with the olive oil and sprinkle on the salt. Toss them around to coat evenly. Set aside.
- Unroll your thawed piece of puff pastry and place it on the prepared baking sheet. Cut the 10"x10" dough in 4 even squares. See notes.
- Cut the wheel of Boursin into 4 equal pieces and place in the center of each Puff Pastry square. Spread into a flat log, diagonally from one corner to another.
- On each square, place 5 of the asparagus on top of the Boursin, in the same diagonal direction.
- Make an egg wash by whisking the egg and milk with a fork. Use a silicone pastry brush, to spread some egg wash on the 2 empty corners of the squares (left and right from the bundle of asparagus).
- Take one corner of the brushed puff pastry, and bring it over the asparagus to hold them together.
- Take the other brushed corner of puff pastry, stretch it out slightly. Bring it all the way over to the other side of the wrapped bundle, tucking it under ever so slightly.
- Brush the top of each bundle with more egg wash. Sprinkle with some of the Everything Seasoning or sesame seeds and top with grated Mozzarella.
- Place in your preheated oven and right away bring the heat down to 400F. Bake for 15-20 minutes, turning them half way through. They will be ready when the puff pastry is nice and golden.

What are you doing with the 1 cup of parmesean? I cannot see the directions in the recipe.
