Difference Between Crisp and Cobbler
A cobbler has a thicker, biscuit-like topping, while a crisp has a crunchy, oat-based topping. Both are easy, comforting desserts that highlight seasonal fruits!
Cobbler
- Topping: A cobbler has a thick, biscuit-like or cake-like topping that is either dropped in spoonfuls or spread over the fruit filling. It bakes up golden and slightly crisp on the outside while remaining soft and fluffy inside.
- Texture: Soft and doughy with a contrast between the tender fruit and the baked topping.
- Example: Classic peach cobbler with a buttery biscuit topping.
Crisp
- Topping: A crisp features a crumbly, streusel-like topping made from oats, butter, sugar, and sometimes nuts. The oats crisp up as they bake, creating a crunchy texture.
- Texture: Crispy and crumbly on top with a warm, juicy fruit filling underneath.
- Example: A strawberry rhubarb crisp with a golden oat topping.

Start by preheating your oven to 350F. Lightly grease an 8"x11" baking dish. Use a 9"x13" baking dish instead for similar results.

- Cut the peach slices in bite-sized pieces and place in a mixing bowl. Cut the stems off the strawberries and quarter, adding them to the peaches.

- Sprinkle the corn starch over the chopped fruit. Use a rubber spatula or spoon to stir the fruit until the cornstarch is well distributed.

- Add to the bowl of fruits, the granulated sugar. Zest the orange and then juice the same orange and add both to the bowl Stir until well combined.

- Transfer the fruit mixture to the prepared baking dish. Spread it evenly to create a leveled layer. Set aside.
Prepare the Crisp Layer

- Prepare the crumble layer by combine in a clean bowl, the flour, quick oats, brown sugar, cinnamon, salt, and baking powder. Stir to combine.

- Melt the coconut oil and pour it over the dry ingredients for the crumble. Stir it in until there is no more dry flour.

- Sprinkle the crumble mixture evenly over the fruit in the baking dish.

- Bake the Strawberry Peach Crisp in the preheated 350F oven for 25-30 minutes.
Once the crumble is golden and the fruit bubbles, the Strawberry Peach Crisp is ready to take out of the oven. Let the crumble cool for 5-10 minutes, to let it thicken back up before serving.

Which fruit can I use for a Crisp?
Make this Strawberry Peach Crisp your own by using seasonal and/or frozen fruit. Make sure to thaw and drain extra liquids from frozen fruit before using. As long as you have a total of 5 cups total fruit, any combination of fruit should work.
Classic Fruit Choices:
- Peach – A summer favorite with natural sweetness and juiciness.
- Strawberry – Adds bright flavor and pairs well with other fruits.
- Blueberry – Creates a rich, jammy filling.
- Blackberry – Offers a tart, deep berry flavor.
- Cherry – Works well with sweet or tart varieties.
- Apple – A great fall option, often paired with cinnamon.
Unique & Creative Fruit Options:
- Pear – Softens beautifully when baked and pairs well with spices.
- Raspberry – Adds a tangy contrast to sweeter fruits.
- Mango – Brings a tropical, juicy twist.
- Plum – Slightly tart and softens well in baking.
- Mixed Berries – A combination of strawberries, blueberries, raspberries, and blackberries creates a dynamic flavor.
Storing the Strawberry Peach Crisp
Cool the freshly baked Strawberry Peach Crisp completely before storing. Cover tightly with foil or plastic wrap, or transfer to an airtight container. Refrigerate for up to 4 days to keep it fresh and flavorful. Reheat in the oven at 350°F (175°C) for 10–15 minutes to restore the crisp topping, or microwave individual portions for 30–45 seconds. Freeze for up to 3 months by wrapping securely in plastic and placing in a freezer-safe container. Thaw in the refrigerator overnight before reheating and serving.
