Remuez la p\u00e2te, puis versez environ <strong>\u00bd tasse de p\u00e2te<\/strong> au centre de la po\u00eale. Tournez rapidement pour \u00e9taler la p\u00e2te en un cercle fin. Retournez la cr\u00eape. Versez d\u00e9licatement le blanc d'\u0153uf sur la cr\u00eape en train de cuire. Utilisez le dos de la spatule pour d\u00e9placer d\u00e9licatement le blanc afin de l'\u00e9taler jusqu'\u00e0 ce qu'il commence \u00e0 cuire. D\u00e9posez un quart du m\u00e9lange champignons-\u00e9pinards autour du jaune d'\u0153uf plac\u00e9. Saupoudrez \u00bc de la feta sur les l\u00e9gumes cuits. \u00c0 ce stade, le blanc d'\u0153uf doit \u00eatre pris, mais le jaune reste mou. Si la cr\u00eape cuit trop vite, retirez la po\u00eale du feu pour le moment.   <\/p>\n<\/div>\n<\/div>\n\n\n\n<p>7. Repliez les quatre c\u00f4t\u00e9s de la galette vers l'int\u00e9rieur pour former un carr\u00e9, en laissant le jaune d'\u0153uf visible au centre. Poursuivez la cuisson pendant <strong>30 secondes<\/strong> suppl\u00e9mentaires, jusqu'\u00e0 ce que la galette soit bien chaude. Transf\u00e9rez la galette dans une assiette et r\u00e9p\u00e9tez l'op\u00e9ration 3 fois avec le reste de la p\u00e2te et de la garniture. Congelez les galettes en les superposant avec du papier sulfuris\u00e9, en les scellant dans un sac ou un contenant allant au cong\u00e9lateur et en les conservant jusqu'\u00e0 deux mois. R\u00e9chauffez les galettes en les chauffant doucement dans une po\u00eale s\u00e8che pendant 30 \u00e0 60 secondes de chaque c\u00f4t\u00e9 ou en les chauffant bri\u00e8vement au four jusqu'\u00e0 ce qu'elles s'assouplissent.  <\/p>\n\n\n\n<p><strong>Galettes fourr\u00e9es :<\/strong> Ne conservez les galettes fourr\u00e9es que si n\u00e9cessaire en les laissant refroidir compl\u00e8tement, en les transf\u00e9rant dans un r\u00e9cipient herm\u00e9tique et en les r\u00e9frig\u00e9rant pendant 24 heures au maximum.
