Lunch
Welcome to lunch time! You're new favorite part of the day!
For most of us, lunch falls in the middle of a busy day. Forgetting to replenish our forces usually leaves us falling asleep by midafternoon! The key to a successful mid-day bite, is planning!
Soups - On the weekend, I love making a big pot of soup. Plan it in your down time, and have something ready to eat during your busy week. I try to portion some in smaller containers to place in the freezer, in case we have a longer day at the office.
Vegetables - Prepare vegetables like carrots, celery, cucumbers and broccoli to keep in the refrigerator. These are perfect healthy option to put in your lunch with a side of ranch dressing.
Large Tortillas - When in doubt, wrap it up! This is a great way to use up left over meats like cooked chicken, or a roast beef. Chop up the cooked meat and mix it up with veggies, shredded lettuce, cheese and a salad dressing, before wrapping it up in a large tortilla. Makes an amazing lunch!
Rice or Quinoa Bowls - Layer yourself a great lunch, packed with nutrients, by placing your favorite ingredients atop cooked quinoa or rice. This is a great way to stay full and get you ready to sail through the afternoon!
Sandwiches - Feeling nostalgic? Place your next lunch between 2 slices of bread! Growing up, you probably didn't have much choice of what was going to end up in between those 2 slices of white bread. Take control of your happiness by making yourself the sandwich you've always dreamt of having!
